Peach Crumb Bars
A delicious recipe to use those fresh juicy peaches, this sweet and tangy delight pairs perfectly with a warm Summer day. With 5 whole peaches and a large helping of Peach lemonade, the flavor in this crumble is incredible!

INGREDIENTS
CRUST
- 1 cup granulated sugar
- 3 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 cup unsalted cold butter, cut into cubes
- 1 large egg, lightly beaten
PEACH LAYER
- 1/2 cup McSteven's Peach Lemonade
- 1 tablespoon cornstarch
- 1/4 teaspoon cinnamon
- 5 large peaches, peeled and diced
- 1 teaspoon fresh lemon juice
ICING
- 1 cup powdered sugar
- 1/4 teaspoon almond extract
- 1 tablespoon milk (more or less for desired consistency)
DIRECTIONS
- Preheat oven. If using a glass pan: 350 degrees F. If using a metal pan: 375 degrees F. Lightly spray or grease a 13x9-inch baking pan and set aside.
- Prepare the crust: in a medium bowl, whisk together 1 cup sugar, 3 cups flour, baking powder, salt, and cinnamon. Using a pastry cutter, blend the butter until mixture resembles coarse sand. Add the lightly beaten egg and mix until dough begins to hold together, but is still crumbly. Gently press a little more than half the dough into prepared pan.
- Prepare peach filling: in a large mixing bowl, whisk together McSteven's Peach Lemonade, cornstarch, and cinnamon. Add diced peaches and toss to combine. Drizzle lemon juice over peaches and toss to coat.
- Pour the peach mixture over the crust and spread evenly.
- Using hands, press together handfuls of remaining crumb topping to create clumps. Scatter clumps and remaining crumbled topping over the fruit layer leaving some peaches showing through.
- If using a glass pan, bake at 350 degrees F for 50-55 minutes or until lightly browned. If using a metal pan, bake at 375 degrees F for 40-45 minutes.
- Remove from oven and cool completely. Chill before cutting and icing.
- To prepare icing: whisk together powdered sugar, almond extract, and milk. Drizzle on bars just before serving.
